Olivier Morin Description
- Viticulture: Soils are worked manually so the roots plunge deeply. No chemicals are used, grapes are hand harvested.
- Vinification: Grapes are gently pressed, wines aged on lees. Vinified with little SO2 using natural yeasts. Fermented in tank. The wine is bottled with no filtration.
- Aging: Aged on the lees in tank.
- Tasting Note : A wine with intense aromas of white flowers. The mouth is lively and elegant. Briny minerality. Great balance. A wine ready to drink now. Ideal tasting temperature 54°. We suggest decanting it just before serving.
- Serve With: Seafood, white meats and Burgundian cheeses.
