The latest allocated release from Glen Scotia—the 12 year old Mermaid—is the first in a five part series, offering an unpeated single malt finished in one of the rarest Sherry casks possible: the illustrious Palo Cortado.
Historically, Palo Cortado sherries start as ultra-fine Finos, but deviate and ultimately lose their layer of flor that prevents oxidation. The resulting Sherry is often dry and almond-y like an Amontillado, yet rich on the palate like an Oloroso—just without the sweetness.
Finishing the 12 year old Glen Scotia in ex-Palo Cortado Sherry casks has given the whisky a nutty, salty, savory profile that combines the maritame character of the malt with the almond notes of the Sherry in a very delicious way. Wile the Sherry was mostly dry, there is still ample sweetness to the whisky, with loads of candied tropical fruits and just a bit of that oily Campbeltown funk on the thick, resinous finish.
