Christophe Pacalet Description
This Cru from the Beaujolais region was harvested, vinified and bottled by Christophe Pacalet without filtration. It should be served at about 55-60 degrees.
100% Gamay
Christophe Pacalet grapes manually, at maximum maturity, with his own team. The carefully picked and carefully sorted grapes are then transported in 20 kg boxes to the cuvage. They are stored overnight in a cold room while awaiting vatting the next morning. The tanks, thus filled, are saturated with carbon dioxide (Co2) and closed.
VINIFICATION: Carbonic fermentation starts in the juice from the bottom of the tank after a few days, without yeasting or sulfur dioxide (So2) - the indigenous yeasts naturally present in the grape, are very different from one vineyard to another and give to each of the wines a typicality faithful to its terroir. Fermentations will thus last for 2 to 3 weeks depending on the vintage. Then the pressing is carried out on a vertical wooden press, typical of Beaujolais. The juices obtained are decanted (freed from the thick lees), cooled and put in tuns and in Burgundy pieces of 228 liters.
AGING & BOTTLING
The wines are then aged (refined) on fine lees for 5 to 10 months depending on the appellations before bottling.
This is carried out with very little filtration (the bottoms of the barrels are filtered on a cellulose plate, ie about 5% of the total) and slightly sulphite or not depending on the destination of the wines or the customer's request.
Sulfur-free wines are living wines that must be stored at a temperature of 14 ° c, for good conservation.
Vinous Media: 90 Points
Bright magenta. Displays spice-accented aromas of cherry, blackberry and candied licorice, with a floral nuance in the background. Shows good clarity and spicy lift to its bitter cherry and dark berry flavors, which pick up a touch of gaminess as the wine opens up. Finishes on a youthfully chewy note, with solid, spicy thrust, dusty tannins and very good persistence.
