Hailing from a six generation family of Champagne vignerons, Jean-Louis Denois went in search of what’s next. After studying in vineyards all over the world, thirty years ago he finally settled in the upper Aude Valley, in the foothills of the Pyrenees, on the Languedoc’s southwestern fringes. The cool influence of the Atlantic, coupled with the high altitude of his vineyards, yields a terroir as close to the essence of Champagne as is possible in Southern France. Domaine Denois is now spread over 135 acres, 89 of which are planted, in 57 different parcels around the villages of Roquetaillade, Magrie, and Caudies de Fenouillet. These varying plots allow Jean-Louis to blend different exposures, altitudes, and soil types for more nuanced wines.
The Domaine believes in high density planting (5,000 plants/hectare) and Jean-Louis has painstakingly part-replanted every plot since he took over, replacing missing vines rather than ripping them out and completely replanting. He believes in tilling the soil, practices pruning, strict de-budding, and green harvesting. His philosophy favors quality over quantity.
Interestingly, while the vineyards are all in the Limoux Appellation, the refusal of Jean-Louis to use the Mauzac grape means he is not permitted to use the appellation.
Tasting Notes: Delicate salmon pink color with fine long-lasting mousse, classic Pinot Noir strawberry and raspberry aromas. Creamy and refreshing. Not too acidic nor too sweet. Sweet finish without bitter aftertaste.
