Our belief is that the quality of the wine is a direct reflection of the quality of fruit produced. To that end we are constantly working in the vineyard to achieve this. We employ extensive shoot thinning, crop thinning and leaf plucking. With the right crop level, there is more air and light in the canopy to counter disease pressure and more sunlight hits the grapes to aid ripening. Grapes are regularly sampled (for sugar, acidity and pH) and tasted to determine the best possible harvest date. All grapes are hand harvested into small picking bins in order not to damage the fruit. Fruit is then delivered to the winery for processing without delay. Visit the Nittnaus website.
