The Melini family constructed their first winery in 1705 in Pontassieve, a village on the outskirts of Florence. Their wine was consumed locally until 1860, when Laborel Melini collaborated in developing the straw-covered glass flask (fiasco), into which a cork could be mechanically inserted. This made it possible for the wine to travel and launched Melini on European and world markets. The modern Melini winery stands attractively carved out of a steep hillside in the heart of Chianti Classico at Gaggiano. Benefiting from this design, towering multi-stage fermenters accomplish the progressive phases of vinification by gravity rather than forced pumping. Old Limousin oak casks--in lieu of the more common Slavonian barrels--are still employed for aging all the Chiantis. Visit the Melini website.
