Comb Vodka & Gin


Ed Tiedge, a former hedge fund portfolio manager opened a distillery in Port Chester, New York. He named his distillery StilltheOne in honor of 26 years of marriage to wife, Laura, who he says is “still the one.” Stilltheone is Westchester County’s first distillery since Prohibition and one of the few in the country that produces honey-based spirits.

Tiedge hit upon the idea to start a distillery while casting about for what to do after years of trading and investing on Wall Street. When he pitched the idea to his wife Laura, she was all for it, but required that the initial funding come from the sale of his Porsche. He ended up selling the car over the Internet to a man in Switzerland, who happened to own a small winery and cognac distillery, Domaine Matuschka, in Archaic, France. After he learned of Tiedge’s interest in producing spirits, he invited Tiedge to France to apprentice with his Cellar Master/Chief Distiller and help with production. Tiedge, who does not speak French, took it as a sign that he his new career path was the right one, and he spent four weeks in France learning the art of distilling and barrel aging from the family of the man who purchased his car.

Tiedge is distilling and bottling vodka and is starting to produce gin. He is currently planning on having a brandy ready for the fall. The vodka and gin are named COMB and COMB 9, respectively, to reference the honey that the spirits are distilled from. The 9 in COMB 9 signifies the nine botanicals in the gin, including juniper berries, rose petals, lavender, galangal, and orange peel.
